At the book launch recently we demo’d Lentil Balls and Kale salad – more on the salad later but I need to share a brilliant hack for the balls. I added BBQ sauce (instead of soy) and a vegan chicken stock cube (Coles brand is vegan! Massel is also vegan but we saw palm oil as an ingredient so steered clear of that one – I will do more investigation). They took on an Italian twist and were really really good! For those that don’t have the book: Protein 24%, Iron 20%, Magnesium and Zinc >20%!
1 cup cooked lentils
1 cup oats
1 cup walnuts
1 onion
2 cloves garlic
1 Tbsp red wine vinegar
1 Tbsp soy sauce
2 Tbsp mixed herbs
1.4 cup nutritional yeast
salt and pepper.
Pulse in food processor until mixed. Roll in to balls, and fry. Easy as!
