Dinner for everyone
Lentil loaf is so easy. Slice it up and put in the freezer for later, or dinner for the whole family.
42% protein (+ more depending on what you serve it with!), 33% iron! 45% dietary fibre! 100% RDI for Vit C which assists absorption of iron – perfect match!
Fry 1 chopped onion and 1 (or more) cloves of garlic. Then put into a blender along with:
1 cup mushrooms
2 carrots
1 capsicum
400g can lentils drained
400g can black beans drained
1 cup oats
2 tsp ground flax seeds
1/2 cup walnuts
100g tomato paste.
Blitz. Press in to a prepared loaf tin and bake for 30min at 180 degrees. Mix 70g of tomato paste with a little water and baste the top and put back in to the oven for 10min.
It really is that easy!
